About Me
Very few people know this, but one of my holiday jobs in college was a baker's assistant at a private club in Singapore. I took the job because it paid very well, even though I had zero experience. For two years during the holidays, I worked long shifts in the pastry kitchen, baking breakfast loaves, dinner rolls and cakes for the thousands of members at the club. In December, we spent days and nights churning out an endless stream of delicate Christmas log cakes and traditional mince pies for home parties. It was a memorable period of time for me.
I picked up my baking skills on the job, working with large commercial ovens and mixers. Even though I was working alongside the chief baker daily baking hundreds of loaves, I can't say I became an expert in just a few months. There was way too much to learn and I was started from the very bottom rung. After I left, I did not manage to bake regularly because work and travels took over a large part of my life.
In 2017, I moved to San Francisco, where cooking and baking became a regular activity because eating out was not as affordable or economical as Singapore. I started experimenting with different dishes and recipes on the weekends. At some point, I acquired a sourdough starter in a workshop and was introduced to the world of sourdough baking.
Flour, water and patience were all it took, to transform these simple raw ingredients into a beautiful sourdough boule. Fast forward to March 2020, in the midst of the covid-19 pandemic, I had to stay at home every day, all day and found myself with ample time to execute this time-intensive baking process repeatedly.
The smell of fresh bread was always uplifting, and along the way, I managed to create some gorgeous looking boules of sourdough. I started experimenting with different recipes and techniques to try and achieve a perfect loaf every time.
Since I was baking every week, I thought it would be fun to document the process and share it on social media. I also started giving out free starters in my neighborhood, which led to more questions by co-workers and neighbors about my recipe. Eventually, this led to the creation of this blog to share my sourdough adventures. Hopefully, this blog can inspire you to embark on your sourdough journey as well.
